Our pantry explained: How we select the products that go into Bergonda Gourmet

Nuestra despensa explicada: Cómo seleccionamos los productos que entran en Bergonda Gourmet - Bergonda Gourmet

In a market saturated with labels that abuse words like "artisanal," "gourmet," or "premium," it is easy to lose sight of what truly matters: the origin, the respect for the raw materials, and the honest work of the person behind them.

When we launched Bergonda Gourmet, we had a non-negotiable premise: We didn't want to be an endless catalog of intermediaries, but rather a hand-selected pantry. Every bottle, every jar, and every package you find at www.bergonda.com has gone through a rigorous screening process.

Today, we open the doors of our mental workshop to tell you exactly what we demand from a product before welcoming it into our shop.

The origin filter: Roots in Álava and our environment

We firmly believe in the value of what is nearby. Our starting point is always Álava and the surrounding valleys, a land with exceptional agronomic and gastronomic diversity: from the salt valleys and cereal plains to the foothills of the mountains and the Rioja Alavesa.

For a product to enter our pantry, it must have a real and demonstrable connection to the territory. We are not interested in brands that simply package at the source but bring their raw materials from thousands of miles away. We seek local harvests, seeds adapted to our climate, and preparations that speak of our landscape.

The four pillars of our selection criteria

Before incorporating a new reference, we subject it to four basic questions:

Who is behind the production?

We prioritize family projects, local cooperatives, and small workshops where we know the producers by name. We like to visit the fields, see the presses, smell the stills, and understand why they do things the way they do. If the producer is passionate about their craft, the final product reflects it.

How is the raw material transformed?

Less is more. We shun unnecessary preservatives, artificial colorings, and aggressive processes that mask the original flavor.

If it is an extra virgin olive oil, we demand cold extraction to preserve the aromas and antioxidants intact.

If they are legumes or flours, we look for clean milling, without mixtures or additives that alter how they behave in the kitchen.

If they are spirits and distillates, we look for traditional recipes, patient botanical macerations, and slow distillations in copper stills.

The acid test: Blind tasting

We do not sell anything that we wouldn't regularly have on our own table. Each product is tested, tasted, and compared with market alternatives. We evaluate balance on the palate, texture, aromatic authenticity, and honesty. If a reference does not excite us or we feel it doesn't add anything distinctive to the pantry, it does not enter the catalog.

Commitment to real sustainability

Packaging must be sensible, prioritizing recyclable materials like glass, paper, and cardboard. Furthermore, by working with short circuits and local producers, we reduce the transport footprint and ensure that the economic value stays in the rural areas that keep our environment alive.

✅ In our pantry, there ARE:

  • Limited and seasonal batches: we respect the natural rhythms of the earth.
  • Clean and transparent ingredients: short lists, without additives or artifices.
  • Direct dealings: a relationship of trust and fair price with every local artisan.
  • Flavors with identity: genuine personality of our environment.

❌ In our pantry, there will NEVER be:

  • Mass industrial production: depersonalized preparations.
  • Added chemistry: flavor enhancers or unnecessary preservatives.
  • Generic large-scale distribution: standardized products without a soul.
  • Empty marketing: labels that say "artisanal" without truly being so.

Much more than shopping: A way of understanding the table

Buying from Bergonda Gourmet means choosing the type of pantry we want to support. It means enjoying an appetizer knowing exactly which field the seed came from, what sun ripened the fruit, or what winery took care of the barrel.

We invite you to discover our current selection, try things calmly, and take home the authentic flavor of our land.
